Grainloka: Local Food Innovation Based on Archipelago Grains

Indonesia possesses a wealth of diverse food resources, including various types of local grains that hold great potential as highly nutritious food sources. However, many of these commodities are still primarily utilized in traditional food forms, meaning their economic value-add has not yet been optimally developed.

Meanwhile, growing public awareness regarding healthy lifestyles is driving demand for food products that are convenient, nutritious, and easy to consume. This situation presents an opportunity to develop food innovations based on Indonesian local ingredients that can meet the needs of modern consumers.

Through the Student Creativity Program for Entrepreneurship (PKM-K), Grainloka was developed—a functional granola innovation based on Indonesian local grains that serves as a healthy and sustainable food alternative. Grainloka champions the “Javanese Granary Series” (Seri Lumbung Jawa) concept, aiming to revive the culinary wisdom of the archipelago by transforming local ingredients into modern, value-added products.

Transforming Local Food Wealth into Value-Added Products

Grainloka utilizes various local commodities—such as sorghum, Job’s tears, foxtail millet, black-eyed peas, pigeon peas, cashews, and jackfruit seeds—as its primary ingredients. These ingredients were selected based on their nutritional potential and their availability as local Indonesian food sources.

Sorghum was chosen for its excellent fiber and protein content, while Job’s tears and foxtail millet serve as sources of complex carbohydrates, fiber, protein, minerals, and bioactive compounds. A combination of local legumes, such as black-eyed peas and pigeon peas, also contributes plant-based protein to the product formulation.

By processing these ingredients into granola, local food sources that were previously underutilized in modern products can achieve higher economic value while becoming more appealing to contemporary consumers.

Grainloka’s Contribution to SDG 2: Zero Hunger

The development of Grainloka aligns with the Sustainable Development Goals (SDGs), specifically SDG 2: Zero Hunger, which focuses on food security and the development of sustainable food systems.

By utilizing local Indonesian grains, Grainloka supports food diversification by offering an alternative food source that is both convenient and nutritious. The use of commodities such as sorghum, foxtail millet, Job’s tears, and local legumes serves as a means to enhance the value of Indonesia’s food resources.

Beyond providing a healthy food alternative, this innovation supports the sustainable use of local resources. By transforming ingredients available in Indonesia into modern products, Grainloka contributes to strengthening food self-sufficiency and reducing reliance on imported food products.

Food Technology Innovation in Grainloka’s Development

Grainloka is developed through a series of food processing stages, ranging from raw material selection, washing, and pre-treatment to drying, formulation mixing, baking, and packaging. This process ensures high-quality granola while preserving the characteristics of the local ingredients used. In addition to SDG 2, this innovation also aligns with SDG 9 (Industry, Innovation, and Infrastructure), given its significant impact on the industrial and innovation sectors.

Grainloka is available in three flavors—Vanilla, Chocolate, and Banana—and is packaged in stand-up pouches to maintain product quality and crunchiness.

From Student Innovation to Community Impact

Grainloka exemplifies the application of student knowledge and creativity in devising solutions based on local potential. Through the PKM-K (Student Creativity Program – Entrepreneurship) initiative, product development encompasses not only production but also marketing, business management, and strategic business planning.

The product targets consumers seeking healthy, convenient food alternatives, particularly those in productive age groups such as university students, young professionals, and urban families.

Through the Grainloka innovation, students aim to demonstrate that Indonesian local food holds significant potential to be developed into competitive, modern products that support food security and generate added value for the community.
