Mahasiswa UNNES Ciptakan Tablet Antioksidan Alami dari Ekstrak Beras Kencur

Penyakit tidak menular menjadi penyebab 73% kematian di Indonesia. Gangguan kesehatan ini diantaranya kanker, neurodeneratif, inflamasi, hipertensi, dan penyakit jantung yang dipicu oleh stres oksidatif karena reactive oxygen species (ROS). Salah satu upaya pencegahan terhadap ROS atau radikal bebas dapat dilakukan dengan mengkonsumsi sumber pangan alami yang mengandung antioksidan.

Tim Program Kreativitas Mahasiswa Riset Eksakta, Fakultas Teknik, Universitas Negeri Semarang mengembangkan alternatif effervescent yang mengandung antioksidan dengan menggunakan ekstrak beras dan kencur.

Dengan judul “Formulasi Sediaan Nutrasetikal Effervescent Beras Kencur Berbasis Roller Slugging Compaction untuk Meningkatkan Stabilitas Antioksidan” mereka membuat produk “NUTRACENT”. Produk ini adalah alternatif minuman dengan antioksidan tinggi yang mampu menjaga kekebalan pada tubuh dalam bentuk sediaan tablet effervescent  yang inovasinya belum ada dipasaran.

Dari ekstraksi beras kencur didapatkan kandungan total fenolik dan antioksidan tinggi yang dapat menjaga kekebalan tubuh. Analisis kandungan total fenolik dan antioksidan kemudian diuji menggunakan metode uji Spektrofotometer UV-VIS sedangkan untuk analisis rasa, aroma, bentuk, warna pada produk dilakukan dengan menggunakan metode uji organoleptik. 

Untuk penentuan formulasi terbaik jumlah kandungan total fenolik dan antioksidan pada tablet effervescent ditentukan berdasarkan dari nilai produk tertinggi.

Tim Nutracent terdiri dari Sri Hayati (Teknik Kimia), Yoga Agung Prabowo (Teknik Kimia), Nisrina Hasna’ Nabil (Teknik Kimia), dan Adhika Bintang Syahputra (Teknik Kimia).

Mereka didukung oleh Prof. Dr. Widi Astuti, S. T., M. T. sebagai dosen pendamping.

Kegiatan PKM-RE FT UNNES ini juga telah mendapatkan pendanaan dari Direktorat Jenderal Pendidikan Tinggi, Riset, dan Teknologi Kemendikbud Ristek. 

Tim Nutracent berharap bahwa formulasi terbaik dari tablet effervescent beras kencur yang memiliki kandungan total fenolik dan antioksidan yang tinggi dapat digunakan sebagai alternatif dalam menjaga kekebalan tubuh.
